...are preserves in which the fruit is crushed so that fruit and syrup are totally integrated into a thick spread. They may be made with less sugar, but such jams depend on artificial ingredients to extend their ”shelf life.” Paumanok Preserves relies on purely natural ingredients, thus sugar is the natural preservative. Using liquid fruit pectin allows us to use perfectly ripe fruit- most often tree, bush or vine-ripened- that we reserve at local or regional farms. By plucking our ingredients from farm to kitchen, to pot, to jar, our jams truly represent their fresh, tasty origins.
