Spices and sugar preserve overabundant or season’s-end fruits and vegetables, while providing a superb, vitamin-rich ‘relish’ that enhanced dull winter meals back then, add a lively highlight, now. No matter the country, the intricate blends of spices vary regionally, from bland to hot and spicy. Our chutneys are definitely not bland, and a little goes a long way accompanying traditional curries or other Asian food, with grilled ham or roast pork or lamb. Stirred into hot rice or cold noodles, peasant side dishes are elevated to princely grandeur.
