
Paumanok
Preserves are created by Joan Bernstein, a native Long Islander, whose family
has farmed here for over 100 years.
Jams,
Jellies, Fruit Butters, Conserves, Compotes, Sauces, Marmalades
and Chutneys are prepared,
“a pot at a time,” from the freshest, perfectly ripe
fruits and vegetables - a far cry from commercial processing -
in our "Department of Agriculture Approved"
farm kitchen. Family and friends pitch in during peak seasons:
grandson Frank is champion strawberry huller; his mom tallies
up; Joan cooks; and Great-Grandma is number one critic!
Paumanok
Preserves contain no fat, no additives, no fillers, no artificial
anything. ‘Citric acid’ is squeezed straight from
fresh lemons. Natural fruit pectin thickens those products which
require thickening. Corn syrup never takes the place of pure cane
or brown sugar. Herbs and spices are often direct from the garden.
Joan’s recipes have been handed down and adapted from family
recipes of pre-World War II cookbooks.
The
main ingredients that give Paumanok Preserves its
vigorous flavors, are almost all grown regionally - such as boysenberries,
Damson & Greengage plums, and golden & black raspberries,
that are propagated out in North Fork vineyard country. Local
fruit in season is picked as available for "farm-to-kitchen
freshness."
“Paumanok”
is the Native American name for Long Island. Long Islanders
have always been resourceful, so our products go well beyond the
basics. Yes, you can have strawberry, blueberry, peach and plum,
but wait until you taste the mellifluous melding of peaches and
raspberries we
call Peach Melba; old-fashioned Strawberry-Rhubarb; exquisite
Spiced Plum; and our richly integrated Apple Chutney.
Also
on the menu, are our oven-baked fruit butters, reminiscent of
Great-Grandma’s pies; intensely sweet; Hot Oy Vay! Pepper
Jelly; With luck and a bumper crop, Beach Plum Jam; and our latest
“creativities,” like versatile Patrician Pear Sauce
or Blueblood Blueberry-Port Wine Sauce made with Duckwalk
Vineyards Blueberry Port Wine, to complement everything from
Long Island Duckling to ice cream; horseradish and garlic jellies,
sensational onion marmalade, Bloody Orange Marmalade and Cranberry-Marisol
Pepper Compote…
